The Archive is a real community – Rochelle and her team are the most warm and welcoming people you could wish to meet on a rainy day in Holmfirth. Introduced to me by Juliet and Clair from Wow, this place is now firmly on the Huddle radar, and it should be on yours too. Think of it as food from round the world that feels like home.

Rochelle gave me her beetroot soup recipe and it is stunning. So here we go – get your herb garden ready, it’s about to be ransacked!

4 packs of pre cooked beetroot (roughly 16)
1 and 1/2 big red onions
400g dill
250g parsley
1 bulb of fennel
3 tbsp of garlic powder
1 and 1/2 limes
olive oil
salt and course black pepper
2 vegetable stock pots
1/2 tsp of vinegar (any)
Chop your beetroot into quarters
Behead your fennel and cut into quarters
Oven roast your beetroot and fennel until a little charred
Sauté your red onions in the olive oil
Add your charred veg to the onions in a big pan
Add 750ml of the veg stock and the juices from your beetroot packs
Bubble it all together for 10 mins
Add your garlic powder, pepper and half of your herbs
Now blitz it all up – leave a little chunky if you like a bit of texture
Back onto the hob and bring to the boil
Add your lime, the rest of your herbs and season to taste
Serve with Rogers sourdough and be very very pleased with yourself.
