Share Post:

Who doesn’t love Ben Franco? The pioneer of cool restaurant dining in Huddersfield.

The little yellow NosH matchstick boxes? ‘Mind your napper’ on the low beam. SO cool.

Ben has been offering up his unique catering style for over 35 years in the town now, and also WON the inaugural episode of Come Dine with Me – The Professionals

Today on Huddle, Ben has given us a recipe for a real staple show stopper. Tasty, fun and so on brand for Ben!

Grumpy’s Parsnip and Pink Peppercorn Pakoras

  • 100 g gram flour
    150 g fine grated parsnip
    50 ml sweet chilli
    salt n pepper
    25 g sugar
    50 g pink pepper corns
    30g curry powder of choice
    small bunch finely chopped coriander
    cold water to mix

  1. Make thick batter of all ingredients except parsnips
  2. Heat  deep pan of oil to 180 degrees
  3. Mix a dessert spoon batter and a dessert spoon parsnip together and fry one off, leave to cool and taste. If seasoning and taste is ok – if not add extra sweet chilli and curry powder – then mix in all parsnip thoroughly.
  4. Spoon in 1 dessert spoon of mix at a time into the pan and cook until golden brown . Finish in oven for 5 mins if needed  to cook through.
  5. Serve with minted yoghurt and sprinkle with pomegranate and fresh coriander.

They are gluten and dairy free and can be frozen, and of course they are well tasty.

Enjoy
