This red lentil dahl is a nutrient-packed, plant-based meal that supports both energy and wellbeing. Red lentils are an excellent source of plant protein and fibre, helping to keep you full and support digestive health. The tomatoes and spinach provide vitamins, minerals, and antioxidants, while coconut milk makes this creamy and comforting. The combination of ginger, garlic, and warming spices not only boosts flavour but also has anti-inflammatory and immune-supporting properties, making this a wholesome, satisfying, and nourishing dish for everyday vitality.

Ingredients

  • 450g dried red lentils
  • 1 tin chopped cherry tomatoes
  • 1 tin coconut milk
  • 500ml vegetable stock
  • 1 thumb-sized piece fresh ginger, grated
  • 2 garlic cloves, crushed
  • 1 tbsp nutritional yeast
  • 1 tsp turmeric
  • 1 tsp dried coriander
  • 1 tsp cumin seeds
  • 1 tsp paprika
  • 1 tsp cracked black pepper
  • Good handful of fresh spinach
  • Fresh coriander, chopped (for garnish)
  • 1–2 red chillis, sliced (for garnish)
  • Extra coconut milk, for drizzling

Method

  1. Add to slow cooker: Combine garlic, ginger, cumin seeds, turmeric, paprika, dried coriander, cracked black pepper, red lentils, chopped tomatoes, coconut milk, vegetable stock, and nutritional yeast. Stir well.
  2. Cook: Set slow cooker to low for 6–7 hours or high for 3–4 hours, until lentils are tender and dahl is creamy.
  3. Add spinach: About 10 minutes before serving, stir in the fresh spinach so it wilts gently.
  4. Garnish and serve: Drizzle with extra coconut milk, sprinkle with chopped fresh coriander, and top with sliced red peppers. Serve with warm homemade flatbreads.
